Chocolate Espresso Pudding (Instant Pot)

Espresso Chocolate PuddingThere are times when you create a recipe and with one spoonful, you realize why you play with flavors everyday. This Chocolate Espresso Pudding, is one of those recipes. A dense and rich marriage of deep and flavorful espresso, with a medley of milk and dark chocolate.

This chocolate pudding cooks in the instant pot.  The results is a texture that is dense, smooth and seductively rich and decadent. The kind of velvety smoothness, that makes your spirit happy just thinking about it.

As is my style, when I am super busy I compensate with food. This is the compensation treat for the brood and brood leader this week. In particular, it made my son’s evenings. He is big on coffee but is not really allowed to indulge in the joys of caffeine. This pudding gives him just the vicarious satisfaction that he longs for in a dessert.

The ingredients are simple, but the medley of the dark and the milk chocolate is what give the pudding a unique depth of flavor.

The rest is about rich cream, egg yolks and the instant pot doing its magic. I also ditch the process of gradually adding in the egg yolks into the hot cream. I just allow it to cool some and then add in the eggs in a simple stream.

Chocolate makes my household happy. It is not particularly always my thing. So recipes on this website, will the ones that will appeal to both chocolate lovers and one who are not. The finish with a dollop of creme fraiche also is a good idea. I would say some raspberries would not hurt. I picked up these red cups at a sale. They are heat proof and look like they will keep us plenty happy especially during winter when red is in vogue. Without much fuss and adequate fanfare, I offer you an absolutely amazing super easy dessert.

Chocolate Espresso Pudding (Instant Pot)

A deep and seductively rich instant espresso chocolate pudding.

Ingredients

  • 1 tablespoon espresso powder
  • 1/4 cup boiling water
  • 4 ounces (5 squares) of milk chocolate
  • 4 ounces (5 squares) of dark chocolate (70% cacao or higher)
  • 1 cup of heavy cream
  • 1/2 cup milk
  • 3 tablespoons sugar or to taste
  • 1 3 inch stick of cinnamon
  • 1 teaspoon vanilla extract
  • 3 egg yolks
  • 1 whole egg
  • 2 tablespoons creme fraiche or sour cream
  • Grated chocolate

Instructions

  1. Prepare 4 to 6 serving size ramekins.
  2. Stir in the espresso powder into the boiling water. Add in the milk and dark chocolate. Stir and microwave for 30 seconds. This will make this soft enough to add to the milk and cream.
  3. Place the cream, milk and sugar in a saucepan with the cinnamon stick and bring to a boil. Turn off the heat. After 5 minutes, remove the cinnamon stick. Add in the chocolate espresso mixture and allow mix well. Allow the mixture to cool down.
  4. In a separate bowl, mix the egg yolks with the egg and vanilla extract. Stir into the cooled milk mixture.
  5. Divide evenly with the prepared ramekins. Cover with foil.
  6. Place a trivet in the instant pot. Add in 1 cup of water. Place the ramekins over the trivet. You can carefully stack if needed.
  7. Set to high pressure steam setting for 20 minutes. Allow a natural steam release.
  8. Chill for 2 to 3 hours.
  9. Serve garnished with creme fraiche and grated chocolate.

Notes

Total Time includes chilling and cooling time.
