Roasted Root Vegetable Hummus and Cheater Roasted Vegetables

Cheater Roasted VegetablesOur Beetroot crop is thriving and it is time to revive an old creation. I love beets. So many creative ways to use them. In this recipe, I am harnessing their bright color and natural sweetness to come up with a lovely Hummus. This is a Roasted Root Vegetable Hummus. As for the cheater roasted vegetables, these are air fried. Now, just as a note the vegetables are a good candidate for microwaving.

 

My Roasted Root Vegetable Hummus Story

I realize today that there really is no such a thing as a new normal. Things are either normal or they are not. Normal, I have learned is a good place to be be, new normal, not so much…  Having said this, my usual calm, sense of bouncing back has helped me with this pandemic.  And, as with everything predictability helps. Simple things like the beets in my garden. And the greens. The gorgeous and beautiful greens. Always the first thing that I use.

I have begun to find my way back to the kitchen, cooking the simple things that I love and enjoy making.  In order to beat the heat, I came up with this version of cheater roasted vegetables. Pretty simple, done in an air fryer or microwave. Another score for the CrispLid. Makes me realize why the air fryer is so popular in Indian kitchens. Roasted Root Vegetable Hummus I should ideally have more time to post on the site. Believe me there have been some some winners! Actually more winners than I can pen down on this site.  As with everything, I love to challenge myself. I am working through figuring out video and the world of facebook live. Hits and misses, but let us stick to this hummus. This is one more to join the ranks.

Roasted Root Vegetable Hummus We have had the avocado hummus, the cracked black pepper and chive and then Aadi’s favorite black bean hummus.  I will tell you what I always say, at heart a good hummus is about the chickpeas. Ditch the can and cook the chickpeas until they are very tender. Yes, that is what your instant pot is there for. Use some of the broth. This hummus is very mild mannered. Along with its gorgeous color, this  will seduce you with its mild and delicately sweet taste. Roasted Vegetable Hummus And even as I write this, I acknowledge that while this lovely creation may not solve all my problems, helping me balance and finding my normal is a start.

Roasted Root Vegetable Hummus and Cheater Roasted Vegetables

Total Time: 20 minutes

A beautiful pink hummus flavored with the gentle sweetness of freshly picked root vegetables.

Ingredients

    Cheater Roasted Vegetables
  • 2 medium sized beets, peeled and diced
  • 2 medium sized carrots
  • 3 pods minced garlic
  • 1 or 2 medium sized tomatoes, diced
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • For the hummus
  • 1 cup freshly cooked soft chickpeas (reserve 1/3 cup of the cooking liquid) See note.
  • 2 tablespoons tahini
  • 1/4 cup olive oil
  • 1 teaspoon salt or to taste
  • 1 or 2 pods garlic
  • 3 tablespoons fresh lime juice
  • 4 tablespoons chopped mint
  • Optional Garnish
  • Sumac
  • Slivered Almonds

Instructions

  1. Toss the vegetables with the olive oil, garlic and salt. Place in your air fryer basket and air fry for 15 minutes. See note for microwave instructions.
  2. Mix well.
  3. Place the chickpeas, vegetables with the juices, tahini, olive oil, garlic and lime juice in a food processor and process until pureed.
  4. Remove from the food processor. Stir in the mint.
  5. To plate, drizzle with the garnishes and extra olive oil and serve.

Notes

Notes, for the chickpeas, you can cook them for 15 minutes in your instant pot, allowing a natural release. If you do not have an air-fryer you can place the vegetables in a microwave and microwave for 5 minutes, stir and microwave for 2 more minutes.
